Ingredients

  • 12 oz White chocolate Finely chopped, high-quality
  • ½ cup Heavy cream
  • 3 tablespoon Raspberry jam / preserves
  • 2 tablespoon Unsalted butter Room temperature
  • ¼ teaspoon Vanilla extract
  • 1 pinch Salt Enhances flavor
  • 8 oz White chocolate For coating
  • ½ cup Freeze-dried raspberries Crushed, for topping
  • ¼ cup Cocoa powder Optional
  • ¼ cup Powdered sugar Optional
  • 1 teaspoon Raspberry extract Optional
  • 1 tablespoon Raspberry liqueur Optional
  • Food coloring (pink/red) Optional

Instructions

  • Heat cream until steaming, pour over chopped chocolate, rest 2 mins, whisk smooth. Add jam, butter, vanilla, salt.
  • Chill mixture 2–3 hours, scoop into 1-inch balls, roll smooth, chill 30 mins.
  • Melt coating chocolate, cool to 88–90°F. Dip truffles, sprinkle raspberries, chill 15 mins.
