Ingredients

  • 12 oz Penne pasta Or other medium pasta
  • 2 tablespoon Olive oil
  • 4 cloves Garlic Minced
  • 1 small Onion Finely diced
  • 1 lb Chicken breast Cut into bite-sized pieces (optional)
  • 0.5 cup Sun-dried tomatoes Chopped
  • 1 teaspoon Italian herb blend Dried
  • 0.25 teaspoon Red pepper flakes Optional – adjust to taste
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth Or vegetable broth
  • 3 cups Fresh spinach
  • 0.5 cup Grated parmesan
  • Salt and pepper To taste
  • Fresh basil For garnish

Instructions

  • Boil pasta in salted water until al dente; reserve ½ cup pasta water.
  • In skillet, sauté chicken pieces in olive oil until golden; set aside.
  • Sauté onion and garlic; stir in sun-dried tomatoes, herbs, broth, and cream.
  • Add spinach and stir until wilted; mix in parmesan until melted.
  • Return chicken and pasta to skillet; toss with sauce and adjust texture.
