Ingredients

  • 1 pound Spaghetti pasta regular or gluten-free
  • 6 large Ripe tomatoes diced
  • ½ cup Fresh basil leaves chopped
  • 4 cloves Garlic minced
  • ¼ cup Extra virgin olive oil for sautéing
  • ½ cup Parmesan cheese freshly grated
  • to taste Salt for seasoning pasta water and sauce
  • to taste Black pepper freshly ground
  • 1 tablespoon Balsamic vinegar to enhance flavor

Instructions

  • Dice tomatoes, mince garlic, chop basil, and boil salted water.
  • Add spaghetti to boiling water, cook until al dente, reserve pasta water.
  • Heat olive oil in skillet, cook garlic until fragrant.
  • Add tomatoes to skillet, cook until softened, season.
  • Toss spaghetti with sauce, adding pasta water for silkiness.
  • Fold in basil and Parmesan, adjust seasoning, serve hot.
