Ingredients

For Teriyaki Marinade

  • ½ cup soy sauce use low-sodium if desired
  • ¼ cup brown sugar adds sweetness and caramelization
  • 2 tablespoon rice vinegar balances the sweetness
  • 1 tablespoon fresh ginger minced for flavor depth
  • 3 cloves garlic minced
  • 1 tablespoon sesame oil adds nutty richness
  • 1 teaspoon cornstarch thickens sauce

For the Burgers

  • 1.5 lbs ground beef 80/20 blend for juiciness
  • 4 slices fresh pineapple rings ½ inch thick (or canned, drained)
  • 4 pieces brioche buns lightly toasted
  • 4 slices Swiss or provolone cheese optional, melts nicely
  • 4 leaves lettuce washed and dried
  • 1 medium red onion sliced
  • 1 large tomato sliced

For Teriyaki Mayo

  • ¼ cup mayonnaise creamy base
  • 2 tablespoon reserved teriyaki sauce from marinade
  • 1 teaspoon sriracha optional for spice

Instructions

  • Whisk soy sauce, brown sugar, rice vinegar, ginger, garlic, sesame oil, and cornstarch to make teriyaki sauce.
  • Set aside half the sauce for glazing and mayo.
  • Shape ground beef into 4 patties and marinate for at least 30 minutes.
  • Prepare pineapple rings, lettuce, tomato, and onions.
  • Mix teriyaki mayo with mayonnaise, reserved sauce, and sriracha.
  • Preheat grill to medium-high (375–400°F) and lightly oil grates.
  • Grill patties 4–5 minutes per side, glazing with reserved sauce.
  • Grill pineapple beside burgers until caramelized.
  • Toast buns and layer with lettuce, patty, cheese, pineapple, onion, and tomato.
  • Spread teriyaki mayo on top bun, cover, and serve warm.
