Ingredients

  • 1 cup Mashed sweet potatoes About 2 medium, roasted
  • 2 large Eggs
  • 1 ¼ cups Milk of choice Dairy, almond, or oat
  • 2 tablespoon Melted butter/coconut oil
  • 1 tablespoon Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 ½ cups All-purpose flour Or gluten-free blend
  • 2 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • 1 pinch Ginger (optional)

Instructions

  • Roast sweet potatoes until tender, then mash with a fork or masher and let cool.
  • In a large bowl, mix mashed sweet potatoes, eggs, milk, melted butter or oil, sugar, and vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and ginger.
  • Fold the dry ingredients into the wet until just combined. Let the batter rest for 10 minutes.
  • Preheat and grease your waffle maker. Pour batter and cook according to your machine's instructions until crispy and golden.
  • Serve warm with maple syrup, pecans, honey butter, berries, or whipped cream.
