Strawberry Topping

  • 3 tablespoon strawberry jam natural sweetener

Instructions

  • Mix graham cracker crumbs, melted butter, and sugar. Press into mini molds. Chill for 15 minutes.
  • Beat softened cream cheese and powdered sugar until smooth. Add vanilla extract. Fold in whipped heavy cream.
  • In a bowl, combine diced strawberries, strawberry jam, and lemon juice. Let rest for 5 minutes.
  • Spoon cheesecake mixture into molds, filling them about ¾ full. Top with strawberry mixture.
  • Refrigerate the bites for at least 2 hours, or until set.
