Ingredients

Chicken Taco Seasoning

  • 2 tablespoons chili powder base heat and smoky flavor
  • 1 tablespoon ground cumin adds earthy warmth

  • 1 teaspoon onion powder rounds out the flavor

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

For the Chicken

  • 1.5 pounds chicken thighs boneless, skinless
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice fresh squeezed
  • 2 cloves garlic minced
  • 1 whole jalapeño finely diced, seeds removed

For Assembly

  • 8–10 whole corn or flour tortillas your choice
  • 1 cup Mexican cheese blend shredded
  • 0.5 whole red onion thinly sliced
  • 1 whole avocado sliced
  • 0.25 cup fresh cilantro chopped

Instructions

  • Whisk all seasoning ingredients with oil, lime juice, garlic, and jalapeño. Add chicken pieces and marinate for 15 minutes.
  • Cook marinated chicken in skillet over medium-high heat for 6–8 minutes until charred and cooked through.
  • Warm tortillas in a dry skillet or over a gas flame for 30 seconds per side.
  • Assemble tacos with cooked chicken, cheese, onion, avocado, and cilantro. Serve with lime wedges.
