  • 2 tablespoon olive oil divided
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoon butter unsalted

For the Rice

  • 1.5 cups jasmine rice rinsed
  • 3 cups chicken broth or vegetable broth
  • 1 medium onion diced
  • 1 bell pepper chopped
  • 2 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon lemon juice freshly squeezed
  • 2 stalks green onions sliced
  • 0.25 teaspoon red pepper flakes optional

Instructions

  • Rinse rice thoroughly
  • Sauté onions and peppers
  • Toast rice in oil
  • Simmer rice in broth
  • Pat shrimp dry and season
  • Sear shrimp until pink
  • Add garlic and butter to shrimp
  • Let rice rest 5 minutes
  • Fluff rice and mix with soy + lemon
  • Fold in shrimp and garnish
