Ingredients

Blondie Batter

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Butter, melted Slightly cooled
  • 1.5 cups Brown sugar, packed
  • 2 Eggs Large
  • 2 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract Optional but recommended
  • 1 cup Roasted pistachios Roughly chopped
  • 0.75 cup White chocolate chips
  • 0.25 cup Pistachios For topping, chopped

Instructions

  • Preheat oven to 350°F and line pan with parchment.
  • Whisk flour, baking soda, and salt in a bowl.
  • In a separate bowl, mix butter and brown sugar until smooth.
  • Beat in eggs, then vanilla and almond extract.
  • Combine wet and dry mixtures without overmixing.
  • Fold in pistachios and white chocolate chips.
  • Spread batter in the pan and top with extra pistachios.
  • Bake 28–32 minutes until golden at the edges.
  • Cool in pan for at least 2 hours before slicing.
