  • 1 Hand or stand mixer For smooth filling
  • 1 Mixing bowls Medium and large
  • 1 Spatula For spreading filling

  • 1 Parchment paper For easy removal

Ingredients

  • 2 cups Pistachios, shelled, roasted, unsalted 1 ½ cups ground for crust, ½ cup folded in whole
  • 1 cup Graham cracker crumbs For crust
  • ½ cup Butter, melted Combine with crust
  • 14 oz Sweetened condensed milk 1 can
  • 8 oz Cream cheese, softened Room temperature
  • ½ cup Powdered sugar For sweetness
  • 1 teaspoon Vanilla extract Flavor
  • ¼ cup White chocolate chips Optional
  • 2 tablespoon Honey Optional
  • ¼ teaspoon Almond extract Optional
  • Chopped pistachios For topping

Instructions

  • Preheat oven to 350°F (175°C), line pan with parchment.
  • Grind 1 ½ cups pistachios to coarse meal.
  • Combine pistachio meal, graham crumbs, and melted butter for crust.
  • Press mixture firmly into prepared pan for crust.
  • Beat cream cheese until smooth.
  • Beat in powdered sugar.
  • Add condensed milk, vanilla extract, and mix until smooth.
  • Stir in remaining ½ cup whole pistachios.
  • Spread filling over crust, smooth with spatula.
  • Sprinkle with chopped pistachios.
  • Bake 25–30 minutes, until set but slightly jiggly.
  • Cool 1 hr at room temp + 2 hrs in fridge before cutting.
