Preheat oven to 350°F (175°C), line pan with parchment.
Grind 1 ½ cups pistachios to coarse meal.
Combine pistachio meal, graham crumbs, and melted butter for crust.
Press mixture firmly into prepared pan for crust.
Beat cream cheese until smooth.
Beat in powdered sugar.
Add condensed milk, vanilla extract, and mix until smooth.
Stir in remaining ½ cup whole pistachios.
Spread filling over crust, smooth with spatula.
Sprinkle with chopped pistachios.
Bake 25–30 minutes, until set but slightly jiggly.
Cool 1 hr at room temp + 2 hrs in fridge before cutting.
