Ingredients

For the Pudding Base

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup whole milk substitute with 2% or buttermilk

  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the Peach Layer

  • 4 cups sliced peaches fresh or canned, drained
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  • Preheat oven to 375°F and grease a 9x13-inch baking dish.
  • Mix sliced peaches with brown sugar, cinnamon, cornstarch, and lemon juice; let sit.
  • In a separate bowl, whisk flour, sugar, baking powder, and salt; add milk, melted butter, and vanilla. Mix until smooth.
  • Pour batter into the baking dish; spoon peach mixture on top. Do not stir.
  • Bake 35–40 minutes until top is golden brown and center is set.
  • Let cool for 15 minutes before serving.
