Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 0.5 cup butter melted
  • 0.25 cup granulated sugar
  • 1 pinch salt
  • 1 tablespoon passion fruit pulp optional, for enhanced flavor

Cheesecake Filling

  • 24 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 3 eggs large
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 0.25 cup passion fruit pulp from 4–5 passion fruits

Passion Fruit Topping

  • 0.5 cup passion fruit pulp from 6–8 passion fruits
  • 0.33 cup granulated sugar
  • 2 tablespoons cornstarch
  • 0.25 cup water
  • 1 tablespoon butter

Instructions

  • Preheat oven to 350°F (175°C).
  • Mix crust ingredients in a bowl.
  • Press mixture into pan and bake for 10 minutes. Let cool.
  • Beat cream cheese until smooth. Add sugar and eggs.
  • Mix in sour cream, vanilla, and passion fruit pulp.
  • Pour filling into crust.
  • Reduce oven to 325°F (163°C) and bake 50–60 minutes.
  • Cool in oven with door slightly open for 1 hour.
  • Chill in fridge until fully set.
  • In a saucepan, combine topping ingredients and cook until thick.
  • Stir in butter and let cool.
  • Spread topping over chilled cheesecake.
