Ingredients

  • 1 packet Unflavored gelatin 2.25 tsp, bloomed in cold water
  • 3 tablespoon Cold water For blooming gelatin
  • 2 cups Heavy cream At least 35% fat content
  • ½ cup Whole milk Do not use low-fat
  • ½ cup Granulated sugar Dissolves into warm cream
  • 2 tablespoon High-quality matcha powder Sift before use
  • ½ teaspoon Vanilla extract Optional for flavor depth
  • 1 pinch Salt Balances sweetness
  • Optional garnishes Fresh berries, whipped cream, white chocolate, mint, extra matcha powder

Instructions

  • Sprinkle gelatin over cold water, let bloom 5 mins, microwave until dissolved, stir smooth.
  • Heat cream and milk until simmer, whisk in sugar, add sifted matcha, whisk well.
  • Stir in dissolved gelatin, add vanilla and salt, strain twice for smooth texture.
  • Divide into ramekins, cover with plastic wrap, chill 4+ hrs until set.
