Ingredients

For the Crispy Fries

  • 2 lbs russet potatoes cut into fry shapes
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon cumin gives Tex-Mex flavor
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For the Ground Beef Topping

  • 1 lb ground beef 80/20 blend preferred
  • 1 taco seasoning 1 packet
  • 0.5 cup water
  • 1 small onion diced

For the Cheese Sauce

  • 2 tablespoon butter
  • 2 tablespoon flour
  • 1 cup whole milk
  • 2 cups cheddar cheese shredded
  • 0.25 teaspoon garlic powder
  • cayenne pepper pinch

Toppings

  • 1 cup cheddar cheese additional, for topping
  • 0.25 cup jalapeños sliced
  • 0.5 cup sour cream
  • 0.5 cup guacamole
  • 0.5 cup pico de gallo
  • 2 green onions chopped
  • fresh cilantro for garnish

Instructions

  • Soak cut potatoes for 30 min; pat dry.
  • Toss fries in oil and spices.
  • Bake fries at 425°F for 25–30 min.
  • Brown ground beef with diced onions.
  • Add taco seasoning and simmer 5 min.
  • Make cheese sauce with butter, flour, milk, and cheese.
  • Assemble fries with cheese sauce and beef.
  • Sprinkle with extra cheese and broil briefly.
  • Top with sour cream, guac, pico, etc.
  • Serve hot and enjoy immediately.
