Equipment

  • 1 Large skillet (12 in) Cast iron or stainless steel preferred
  • 1 Mixing bowl For marinating shrimp
  • 1 Chef's knife For chopping herbs
  • 1 Microplane zester For lemon zest
  • 1 Tongs For flipping shrimp
  • 1 Small whisk For mixing marinade

Ingredients

  • 1.5 lbs Shrimp Large, peeled & deveined
  • 3 tablespoon Olive oil Extra virgin preferred
  • 4 cloves Garlic Fresh, minced
  • ¼ cup Lemon juice Freshly squeezed
  • 2 Lemons Zest of both
  • 2 tablespoon Fresh parsley Chopped
  • 1 tablespoon Fresh dill Chopped
  • 1 teaspoon Oregano Dried
  • ½ teaspoon Thyme leaves Fresh
  • 1 teaspoon Sea salt Or to taste
  • ½ teaspoon Black pepper Freshly ground
  • ¼ teaspoon Red pepper flakes Optional
  • 2 tablespoon Butter Or substitute olive oil

Instructions

  • Pat shrimp dry, season with salt and pepper.
  • Rest shrimp at room temperature 10 min.
  • Mix olive oil, garlic, lemon juice, and herbs for marinade.
  • Toss shrimp with half of marinade.
  • Heat skillet on medium-high.
  • Add shrimp in single layer, sear 2–3 min per side.
  • Remove from heat, add butter and remaining marinade.
  • Serve immediately with lemon zest garnish.
