Ingredients

  • 1 cup basmati rice or jasmine rice
  • 2 cups chicken broth or vegetable broth for vegan option
  • 3 tablespoon lemon juice fresh
  • 1 tablespoon lemon zest fresh
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 3 tablespoon fresh dill or 1 tablespoon dried dill weed
  • 2 cloves garlic minced
  • ¼ teaspoon black pepper
  • 2 tablespoon butter optional, for richness
  • lemon wedges for garnish (optional)
  • crumbled feta optional garnish
  • extra dill sprigs for garnish (optional)

Instructions

  • Rinse rice under cold water until clear.
  • Sauté garlic in olive oil for 30 seconds.
  • Add rice and toast for 1–2 minutes.
  • Add broth, lemon juice, zest, and salt.
  • Bring to boil, cover, and simmer 15 minutes.
  • Let rice rest covered for 5 minutes.
  • Fluff with fork, stir in dill and butter.
  • Season with pepper and more salt if needed.
