Assembly

Instructions

  • Whisk together mayonnaise, sriracha, lime juice, honey, and cumin to make the burger sauce.
  • Dice two jalapeños and slice one for topping. Mix softened cream cheese with half of the cheddar.
  • Combine beef, diced jalapeños, spices, and Worcestershire sauce in a bowl.
  • Form 8 thin patties. Stuff 4 with the cheese mixture, then seal with remaining patties.
  • Grill or pan-cook over medium-high heat for 5–6 minutes per side until 160°F internal temperature.
  • Add pepper jack cheese during last minute to melt; toast buns lightly.
  • Assemble burgers with sauce, lettuce, patty, bacon, tomato, onion, and jalapeño slices.
  • Serve hot with extra sauce on the side.
