Whisk together mayonnaise, sriracha, lime juice, honey, and cumin to make the burger sauce.
Dice two jalapeños and slice one for topping. Mix softened cream cheese with half of the cheddar.
Combine beef, diced jalapeños, spices, and Worcestershire sauce in a bowl.
Form 8 thin patties. Stuff 4 with the cheese mixture, then seal with remaining patties.
Grill or pan-cook over medium-high heat for 5–6 minutes per side until 160°F internal temperature.
Add pepper jack cheese during last minute to melt; toast buns lightly.
Assemble burgers with sauce, lettuce, patty, bacon, tomato, onion, and jalapeño slices.
Serve hot with extra sauce on the side.
