  • 1 9x13 inch baking dish Glass/ceramic preferred
  • 1 Large skillet (12-inch) For browning sausage & sauce
  • 1 Wooden spoon For breaking up sausage
  • 1 Large mixing bowl For combining pasta & sauce
  • 1 Aluminum foil To cover while baking
  • 1 Sharp knife & cutting board For dicing veggies

Ingredients

  • 1 pound Italian sausage Sweet or spicy
  • 12 oz Pasta (penne or rigatoni) Slightly undercooked
  • 24 oz Marinara sauce Jarred or homemade
  • 1 cup Ricotta cheese Adds creaminess
  • 2 cups Mozzarella cheese Shredded, divided
  • 0.5 cup Parmesan cheese Grated
  • 1 whole Bell pepper Diced, red or yellow
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced
  • 2 tablespoon Olive oil For sautéing
  • 1 teaspoon Italian herbs Dried (or fresh basil/oregano)
  • Salt & black pepper To taste

Instructions

  • Preheat oven to 375°F. Grease the baking dish. Dice the bell pepper, onion, and garlic.
  • Cook the pasta al dente, 2 minutes less than package instructions. Drain and set aside.
  • In a skillet, brown the sausage over medium heat. Drain excess grease.
  • Sauté onion, bell pepper, and garlic in olive oil until softened.
  • Add marinara sauce and Italian herbs to skillet. Stir in browned sausage. Simmer for a few minutes.
  • In a large mixing bowl, combine the cooked pasta, sausage-sauce mixture, ricotta, and half of the mozzarella.
  • Spread mixture into baking dish. Top with remaining mozzarella and Parmesan. Cover with foil.
  • Bake for 25 minutes. Remove foil and bake another 15 minutes until cheese is golden.
  • Let rest for 5 minutes before serving.
