Ingredients

  • 8 oz Dark chocolate (70%) Finely chopped
  • 0.5 cup Heavy cream (36% fat) Warmed
  • 2 tablespoon Unsalted butter Room temperature
  • 1 tablespoon Vanilla extract Pure, not imitation
  • 1 cup Raw hazelnuts Shells removed
  • 2 tablespoon Hazelnut spread Nutella or similar
  • 1 teaspoon Hazelnut oil Optional, extra flavor
  • 0.5 cup Unsweetened cocoa powder For coating
  • 0.25 cup Powdered sugar For coating
  • 0.5 cup Toasted hazelnuts Finely chopped, for coating
  • Sea salt flakes Finishing touch

Instructions

  • Bake hazelnuts at 350°F for 10–12 minutes. Rub skins off with a towel. Chop half for later use.
  • Pour hot cream over chopped chocolate. Stir until smooth. Add butter, vanilla extract, and hazelnut spread. Mix well.
  • Cover the ganache and refrigerate for 2–3 hours until firm.
  • Scoop 1-inch portions and roll into balls. Fold in chopped hazelnuts as desired.
  • Roll each truffle in cocoa powder, powdered sugar, or chopped hazelnuts. Place on parchment-lined tray.
