Ingredients

  • 1.5 lbs Lean ground turkey 93/7 lean-to-fat ratio
  • 1 large Yellow onion Diced
  • 3 cloves Garlic Minced
  • 1 whole Bell pepper Any color, chopped
  • 15 oz Red enchilada sauce 1 can
  • 14.5 oz Diced tomatoes Drained, 1 can
  • 1 tablespoon Chili powder
  • 2 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt Or to taste
  • 0.25 teaspoon Black pepper
  • 8 Corn tortillas Cut into strips
  • 2 cups Mexican cheese blend Shredded
  • 0.5 cup Sharp cheddar cheese Shredded
  • 0.25 cup Fresh cilantro Chopped
  • 2 Green onions Sliced
  • 1 Lime Cut into wedges
  • 0.5 cup Sour cream (optional) For serving

Instructions

  • Heat skillet, cook ground turkey until no pink remains, set aside.
  • Sauté onion, garlic, and bell pepper; add seasonings and bloom spices.
  • Add turkey back, stir in enchilada sauce, tomatoes, and tortilla strips; simmer 10 min.
  • Top with cheeses, cover until melted; rest 5 min. Garnish with cilantro, green onion, lime.
