Ingredients

  • 2 lbs Chicken pieces Breasts, thighs, or drumsticks
  • 0.25 cup Extra virgin olive oil
  • 0.25 cup Lemon juice Juice of 2 lemons
  • 6 cloves Garlic Minced
  • 2 tablespoon Dried oregano Greek oregano if available
  • 1 teaspoon Dried dill
  • 1 tablespoon Honey Balances acidity
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Lemon Sliced into rounds
  • 1 teaspoon Red pepper flakes Optional; for heat

Instructions

  • Whisk marinade ingredients.
  • Coat chicken in marinade.
  • Refrigerate 2–4 hours or overnight.
  • Bake at 375°F for 35–45 minutes or grill on medium-high heat until internal temp reaches 165°F.
  • Let chicken rest for 5 minutes before serving.
