Instructions

  • Crack eggs into a mixing bowl, whisk with salt and pepper until smooth.
  • Heat butter or olive oil in a non-stick skillet over medium heat.
  • Pour in whisked eggs. Gently push cooked edges toward the center with a spatula.
  • Tilt the pan to let uncooked eggs flow underneath.
  • Sprinkle goat cheese and optional veggies evenly over the eggs.
  • Fold the omelette in half and cook briefly until cheese is melted.
  • Slide onto a plate and garnish with fresh chives. Serve warm.
