Instructions

  • Preheat oven to 425°F (220°C). Wash, scrub, and cut potatoes into 1-inch cubes; pat completely dry.
  • Combine potatoes with olive oil, half the garlic, Italian seasoning, salt, and pepper in a large bowl; mix well to coat.
  • Spread potatoes in a single layer on a parchment-lined baking sheet; roast 20 minutes, flip once, roast another 15–20 minutes until golden and crispy.
  • Melt butter with remaining garlic; drizzle over hot potatoes and sprinkle parmesan cheese to melt.
  • Toss lightly, garnish with fresh parsley, and serve immediately while crispy.
