the Salmon:
- 4 salmon fillets 6 oz each
- 3 tablespoon olive oil
- 4 garlic cloves minced
- 1 lemon
- 1 tablespoon oregano
- 1 teaspoon thyme
- Salt and pepper to taste
the Topping:
- 1 cup cherry tomatoes halved
- ½ cup Kalamata olives chopped
- ¼ cup red onion diced
- ½ cup cucumber diced
- ¼ cup feta cheese
- 2 tablespoon olive oil
- Fresh basil for garnish
Make Topping:
Mix tomatoes, olives, onion, cucumber
Add olive oil and set aside
Season Salmon:
Pat salmon dry
Rub with olive oil, garlic, herbs
Season with salt and pepper
- Don't overcook! Salmon is done at 145°F
- Pat fish dry for better searing
- Let rest 5 minutes before serving
