Mix warm water, yeast, and sugar. Let foam 5 minutes.
Add flour, salt, oil; mix and knead for 8 minutes.
Add tomatoes, garlic, herbs, Parmesan. Knead for 3 more minutes.
Place in oiled bowl, cover with towel, let rise 1 hour.
Punch down dough, shape loaf, let rise another 30 minutes.
Preheat oven to 375°F (190°C). Score loaf. Bake 30–35 minutes.
Cool on wire rack 15 minutes before slicing.
