Ingredients

Instructions

  • Preheat oven to 425°F or air fryer to 400°F.
  • Pat the salmon chunks dry with a paper towel.
  • Prepare a breading station with 3 shallow dishes: one with flour, one with beaten eggs, and one with the coating mix.
  • Mix together parmesan cheese, panko breadcrumbs, garlic powder, onion powder, oregano, paprika, salt, and black pepper.
  • Coat each salmon chunk in flour, then dip in egg, then coat with the breadcrumb mixture.
  • Place coated salmon pieces on a large rimmed baking sheet (with wire rack if using), and drizzle with olive oil or spray lightly if using air fryer.
  • Bake for 12–15 minutes or air fry for 8–10 minutes until golden and cooked through (internal temp 145°F).
  • Let rest for 2 minutes before serving.
