Preheat oven to 425°F or air fryer to 400°F.
Pat the salmon chunks dry with a paper towel.
Prepare a breading station with 3 shallow dishes: one with flour, one with beaten eggs, and one with the coating mix.
Mix together parmesan cheese, panko breadcrumbs, garlic powder, onion powder, oregano, paprika, salt, and black pepper.
Coat each salmon chunk in flour, then dip in egg, then coat with the breadcrumb mixture.
Place coated salmon pieces on a large rimmed baking sheet (with wire rack if using), and drizzle with olive oil or spray lightly if using air fryer.
Bake for 12–15 minutes or air fry for 8–10 minutes until golden and cooked through (internal temp 145°F).
Let rest for 2 minutes before serving.
