Equipment

  • 2 2 mixing bowls one for dry ingredients, one for wet
  • 1 Whisk for mixing batter
  • 1 Rubber spatula for gently folding ingredients
  • 1 Ice cream scoop or ¼ cup measure or use a ¼ cup measuring cup
  • 1 Pastry brush for brushing melted butter on muffins
  • Wire cooling rack to cool muffins after baking

Ingredients

Muffin Batter

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 teaspoon ground cinnamon key flavor ingredient
  • ½ cup unsalted butter melted and slightly cooled
  • ¾ cup brown sugar for moisture and depth
  • 2 large eggs room temperature
  • 1 cup whole milk or use buttermilk or plant milk
  • 1 teaspoon vanilla extract optional but flavorful

Cinnamon Sugar Topping

  • cup granulated sugar
  • 1.5 teaspoon ground cinnamon
  • 2 tablespoon butter melted, for brushing

Instructions

  • Preheat oven to 375°F and line a muffin tin with paper liners.
  • In a medium bowl, whisk flour, baking powder, salt, and cinnamon.
  • In another bowl, whisk melted butter and brown sugar; add eggs, milk, vanilla.
  • Gently fold dry into wet ingredients; do not overmix.
  • Spoon batter into muffin cups ¾ full.
  • Bake 18–20 minutes, until tops are golden and a toothpick comes out clean.
  • Mix cinnamon and sugar. Brush muffin tops with butter and dip into topping.
  • Let muffins cool for 5 minutes in pan, then transfer to wire rack.
