Ingredients

  • 6 large eggs Room temperature works best
  • 4 oz Spanish chorizo sausage Diced; use cured Spanish type
  • ¼ cup sharp cheddar cheese Grated (or Manchego/pepper jack as alternatives)
  • 2 tablespoon olive oil
  • salt & black pepper To taste

Optional Add-ins

  • 1 small onion Finely chopped
  • 1 medium bell pepper Diced
  • 2 cloves garlic Minced
  • fresh herbs Parsley or chives for garnish
  • hot sauce For serving

Instructions

  • Heat skillet over medium, cook diced chorizo 3–4 minutes until crispy; add onion/pepper if using.
  • Whisk eggs with salt & pepper (add milk/cream if desired).
  • Pour eggs over chorizo; let set 30 sec. Gently pull edges to center, tilt pan for flow. Repeat until almost set.
  • Sprinkle cheese on half; fold omelette with spatula; slide to plate; garnish with herbs.
