Add dates, nuts, cocoa powder, coconut oil, vanilla, and salt to food processor; pulse until crumbly and sticky.
Scoop 1 tablespoon mixture, roll into balls, and place on parchment-lined sheet.
Freeze bites for 15 minutes to firm up.
Melt chocolate chips, dip each bite to coat, and top with coconut or nuts.
Chill for 30 minutes until set, then store in airtight container.
