Ingredients

Chicken & Marinade

  • 2 lbs Chicken breasts or thighs, cut into 1-inch cubes
  • 3 tablespoon Olive oil
  • 2 tablespoon Lemon juice Fresh squeezed
  • 4 Garlic cloves Minced
  • 1 tablespoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Honey or brown sugar for caramelization
  • 0.25 teaspoon Red pepper flakes Optional for heat

Skewers

  • 1 Red onion Cut into chunks
  • 2 Bell peppers Any color, cut into chunks
  • 1 Zucchini Sliced into rounds

Instructions

  • Marinate chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and honey for 30 min to 8 hrs.
  • Thread chicken and chopped vegetables onto soaked skewers.
  • Grill 10–12 min (turning every 2–3 min) or bake at 425°F for 20–25 min.
  • Let skewers rest 5 min before serving.
