  • 2 lbs boneless skinless chicken sliced into strips
  • 2 bell peppers (red/yellow) sliced
  • 1 yellow onion sliced
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 1 packet fajita seasoning or homemade
  • 1 can diced tomatoes (14.5 oz) drained
  • 1 cup chicken broth
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • 1 cup cooked rice optional
  • 2 cups Mexican cheese blend shredded
  • ½ cup sharp cheddar cheese shredded
  • ¼ cup cilantro chopped
  • 2 green onions sliced

Instructions

  • Preheat oven to 375°F and grease baking dish. Season chicken with fajita mix. Slice vegetables.
  • Sear chicken in hot skillet 3–4 min per side.
  • Spread half of cream mix in dish. Layer chicken, veggies, tomatoes, broth, then top with cream mix. Cover with foil.
  • Bake covered 20 min. Remove foil, top with cheese, bake uncovered 10–15 min until bubbly. Let rest 5 min.
