Equipment

  • 1 9x13-inch glass or ceramic baking dish Standard casserole size, distributes heat evenly
  • 1 Large mixing bowl For combining all ingredients
  • 1 Large pot for pasta At least 4-quart, prevents sticking

Ingredients

  • 3 cups cooked turkey, diced or shredded Leftovers or rotisserie chicken; ground turkey also works
  • 12 oz pasta (penne, rotini, or egg noodles) Or 3 cups cooked rice for variation
  • 2 cups shredded cheddar cheese Sharp cheddar preferred; mix with mozzarella if desired
  • 1 cup sour cream Greek yogurt as lighter option
  • 1 can (10.5 oz) cream of mushroom soup Substitute cream of chicken if preferred
  • 1 cup chicken or turkey broth Or vegetable broth
  • 1 cup frozen mixed vegetables Peas, carrots, corn; broccoli as variation
  • 1 medium onion, diced Optional for time-saving
  • 2 cloves garlic, minced Enhances flavor
  • 1 cup breadcrumbs or crushed crackers For crunchy topping
  • 2 tablespoon melted butter Mix with breadcrumbs
  • ½ cup Parmesan cheese, shredded Adds extra flavor to topping
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme or Italian seasoning

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13 dish.
  • Cook pasta until just al dente, drain.
  • Cook raw ground turkey if using, season lightly.
  • Dice cooked turkey, chop onion, mince garlic.
  • Mix soup, broth, sour cream in bowl; add onion, garlic, veggies, seasonings.
  • Fold in pasta and turkey, mix in 1.5 cups cheddar.
  • Spread mixture in baking dish, top with remaining cheese.
  • Combine breadcrumbs, butter, Parmesan; scatter over casserole.
  • Cover with foil, bake 25 min; uncover and bake 15–20 min until golden.
  • Rest 5–10 min before serving.
