Ingredients

  • 1.5 lb baby potatoes Quartered; Yukon Gold or red
  • 14 oz smoked sausage (kielbasa) Sliced into ¼-inch rounds

Instructions

  • Wash/quarter potatoes; slice sausage; dice pepper/onion; mince garlic; shred cheese; set seasonings.
  • Heat skillet over medium-high 5 minutes.
  • Add olive oil + 2 tablespoon butter; melt completely.
  • Add potatoes in single layer; season with salt, pepper, paprika, garlic & onion powder.
  • Cook 12–15 min, stirring every ~4 min until golden and fork-tender.
  • Push potatoes to sides; add remaining 1 tablespoon butter to center.
  • Sauté sliced sausage 3–4 min until edges brown.
  • Add peppers & onions; toss all together 5–7 min; add garlic for last 1 min.
  • Reduce heat to low; sprinkle cheddar evenly.
  • Cover 2–3 min until cheese melts and bubbles.
  • Remove from heat; garnish parsley; rest 2 minutes.
  • Scoop and serve hot.
