- Wash/quarter potatoes; slice sausage; dice pepper/onion; mince garlic; shred cheese; set seasonings. 
- Heat skillet over medium-high 5 minutes. 
- Add olive oil + 2 tablespoon butter; melt completely. 
- Add potatoes in single layer; season with salt, pepper, paprika, garlic & onion powder. 
- Cook 12–15 min, stirring every ~4 min until golden and fork-tender. 
- Push potatoes to sides; add remaining 1 tablespoon butter to center. 
- Sauté sliced sausage 3–4 min until edges brown. 
- Add peppers & onions; toss all together 5–7 min; add garlic for last 1 min. 
- Reduce heat to low; sprinkle cheddar evenly. 
- Cover 2–3 min until cheese melts and bubbles. 
- Remove from heat; garnish parsley; rest 2 minutes. 
- Scoop and serve hot.
