  • 2 pounds fresh carrots Peeled and chopped into chunks
  • 1 large onion Diced
  • 4 cloves garlic Minced

  • 1 teaspoon ground coriander Balances flavor with cumin

Instructions

  • Preheat oven to 400°F (200°C) and roast carrots with olive oil, salt, and pepper for 15 minutes until golden.
  • In a large pot, sauté onion in olive oil for 3 minutes, add garlic, and cook 1 minute until fragrant.
  • Add roasted carrots, broth, cumin, coriander, ginger, and coconut milk. Simmer for 10 minutes.
  • Blend soup until smooth using an immersion blender, add lemon juice, and season to taste.
