  • 1 24-cup mini muffin tin Non-stick preferred
  • 1 Electric hand mixer or stand mixer For smooth filling
  • 2–3 Medium mixing bowls 2–3, separate components
  • 1 Small saucepan For cooking apple topping
  • 1 Rubber spatula Folding and scraping bowls
  • 1 Small spoon or cookie scoop For even filling distribution

Ingredients

Crust

  • 1 cup Graham cracker crumbs About 8 whole crackers, finely crushed
  • 3 tablespoon Butter Melted
  • 2 tablespoon Granulated sugar
  • Pinch Salt

Cheesecake Filling

  • 16 oz Cream cheese Softened to room temp
  • ½ cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Ground cinnamon
  • 1 cup Heavy whipping cream Whipped to stiff peaks

Caramel Apple Topping

  • 2 medium Granny Smith apples Peeled & diced small
  • cup Caramel sauce Store-bought or homemade
  • 2 tablespoon Brown sugar
  • 1 tablespoon Butter For apple topping
  • ¼ teaspoon Cinnamon For apple topping
  • Extra Caramel sauce For drizzling

Instructions

  • Combine crust ingredients, press into muffin tin, chill.
  • Beat cream cheese, sugar, vanilla, cinnamon.
  • Fold in whipped cream, spoon into crusts.
  • Cook apples with butter, sugar, cinnamon.
  • Stir in caramel, cool slightly.
  • Spoon apple topping over cheesecake bites.
  • Drizzle extra caramel, refrigerate 2 hrs.
