  • 1 Large pot For boiling pasta
  • 1 Large skillet or Dutch oven Heavy-bottomed, 12-inch recommended
  • 1 Wooden spoon / silicone spatula For stirring
  • 1 Chef's knife For chopping chicken & vegetables
  • 1 Cutting board Preferably separate for meat
  • 1 set Measuring cups & spoons Standard set
  • 1 Cheese grater For fresh Parmesan

Ingredients

  • 1 pound boneless skinless chicken breasts Cut into bite-sized pieces
  • 12 oz spaghetti pasta Or penne/fettuccine as substitute
  • 2 tablespoon olive oil For cooking chicken
  • 2 tablespoon Cajun seasoning Store-bought or homemade
  • 1 teaspoon paprika Sweet or smoked
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper Adjust to taste
  • 1 large bell pepper Red or green, sliced
  • 1 medium yellow onion Sliced
  • 3 cloves garlic Minced
  • 2 stalks green onions Chopped, for garnish
  • 1 cup heavy cream Can sub half-and-half
  • ½ cup chicken broth For sauce base
  • ½ cup Parmesan cheese Freshly grated
  • 2 tablespoon butter Unsalted preferred
  • salt & black pepper To taste

Instructions

  • Season chicken with Cajun spices.
  • Sear chicken in skillet until golden.
  • Remove chicken, sauté peppers & onions.
  • Add garlic, cook until fragrant.
  • Deglaze pan with broth.
  • Add cream, simmer & whisk in Parmesan.
  • Toss spaghetti in sauce.
  • Return chicken, stir & heat through.
  • Garnish with green onions, serve hot.
