Ingredients

Salad Base

  • 4 large peaches ripe, sliced into wedges
  • 2 cups blueberries fresh, rinsed and dried (or thawed frozen)

Honey Lemon Dressing

  • 3 tablespoon honey or maple syrup for vegan option
  • 2 tablespoon lemon juice freshly squeezed
  • 1 tablespoon olive oil smooth consistency
  • 1 lemon zest zest of 1 lemon

Toppings

  • ¼ cup mint leaves fresh, torn or chopped
  • ½ cup feta cheese optional, crumbled (or goat cheese)
  • cup pecans/almonds toasted for crunch
  • 2 cups baby spinach/arugula optional, for a heartier salad

Instructions

  • Wash and dry peaches, slice into wedges, place in bowl.
  • Rinse and dry blueberries, add to peaches.
  • Whisk honey, lemon juice, olive oil, and zest until smooth.
  • Pour dressing over fruit and fold gently.
  • Add mint, spinach/arugula if using, toss lightly.
  • Sprinkle feta and nuts on top, serve fresh and chilled.
