Ingredients

  • ½ cup Rolled oats Old-fashioned oats preferred
  • ½ cup Milk of choice Almond, oat, or dairy
  • 2 tablespoon Greek yogurt Adds protein & creaminess
  • 1 tablespoon Chia seeds For thickness & nutrition
  • 1 tablespoon Honey or maple syrup Adjust to taste
  • cup Fresh blueberries Frozen works too
  • ½ zest Lemon About 1 teaspoon zest
  • 1 tablespoon Lemon juice Freshly squeezed
  • ¼ teaspoon Vanilla extract For depth of flavor
  • 1 pinch Salt Balances sweetness

Instructions

  • Combine oats, chia seeds, and salt in a jar.
  • Mix in Greek yogurt, then add milk.
  • Stir in sweetener, lemon zest, juice, and vanilla.
  • Fold in blueberries gently.
  • Cover and refrigerate at least 4 hrs or overnight.
  • Stir before serving and add toppings.
