Ingredients

Base Layer & Topping

  • 2 cups Rolled oats Old-fashioned preferred
  • 1.5 cups All-purpose flour For structure
  • 0.75 cup Brown sugar Adds moisture and flavor
  • 0.5 cup Cold butter Cubed
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Vanilla extract

Blackberry Filling

  • 3 cups Blackberries Fresh preferred, frozen thawed OK
  • 0.33 cup Granulated sugar Adjust to taste
  • 2 tablespoon Cornstarch Thickening agent
  • 1 tablespoon Lemon juice Adds brightness
  • 1 teaspoon Lemon zest For citrus aroma

Instructions

  • Preheat oven to 350°F and line an 8x8 inch pan with parchment.
  • Mix oats, flour, sugar, salt, butter, and vanilla to make crumble.
  • Press half of crumble into pan to form base.
  • Toss blackberries with sugar, cornstarch, lemon juice, and zest.
  • Spread berry mix over base and top with remaining crumble.
  • Bake 35–40 minutes until golden and bubbly.
  • Cool completely for 2 hours before slicing.
