  • 1 lb ground beef 80/20 blend for best flavor
  • 4 medium russet potatoes diced into ½-inch cubes
  • 1 large yellow onion diced
  • 2 tablespoon olive oil or vegetable oil
  • salt and black pepper to taste

Flavor Boosters

  • 2 cloves garlic minced
  • 1 bell pepper diced, any color
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper optional

Optional Finishing Touches

  • 1 cup shredded cheddar cheese
  • 2 green onions chopped
  • 2 tablespoon fresh parsley chopped
  • sour cream for serving

Instructions

  • Dice and dry potatoes, season with salt and pepper.
  • Heat oil in a skillet, cook potatoes until golden and crispy.
  • Push potatoes to one side, brown ground beef with seasonings.
  • Add onion, pepper, and garlic. Cook everything together until softened.
  • Top with cheddar cheese if using. Garnish with parsley and green onions. Serve with sour cream.
