Ingredients

Jackfruit Sliders

  • 2 cans (20 oz each) Young green jackfruit in brine Drained and rinsed
  • 1 large Yellow onion Diced
  • 3 cloves Garlic Minced
  • 2 tablespoon Olive oil
  • 8 buns Slider buns Brioche or whole wheat

BBQ Sauce & Seasonings

  • 1 cup Barbecue sauce Divided
  • 2 tablespoon Tomato paste
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Cayenne pepper Optional heat
  • Salt & black pepper To taste

Optional Toppings

  • Coleslaw mix
  • Pickles
  • Red onion slices
  • Vegan cheese slices

Instructions

  • Drain, rinse, and shred jackfruit. Remove seeds/cores, pat dry, season with salt, pepper, and half of spices.
  • Heat olive oil, cook onions until translucent, add garlic and tomato paste, cook until fragrant.
  • Add jackfruit, cook 8–10 min. Add BBQ sauce, vinegar, spices, simmer 15–20 min. Adjust sauce as needed.
  • Toast buns, add jackfruit mix, top with coleslaw/pickles/onion, crown with top bun, serve hot.
