Drain, rinse, and shred jackfruit. Remove seeds/cores, pat dry, season with salt, pepper, and half of spices.
Heat olive oil, cook onions until translucent, add garlic and tomato paste, cook until fragrant.
Add jackfruit, cook 8–10 min. Add BBQ sauce, vinegar, spices, simmer 15–20 min. Adjust sauce as needed.
Toast buns, add jackfruit mix, top with coleslaw/pickles/onion, crown with top bun, serve hot.
