Ingredients

  • 1 pound Rotini or penne pasta Cooked al dente
  • 2 cups Cooked BBQ chicken Diced or shredded
  • 1 cup Corn kernels Fresh or frozen
  • 1 cup Black beans Drained & rinsed
  • 1 Red bell pepper Diced
  • 0.5 Red onion Finely chopped
  • 1 cup Cherry tomatoes Halved
  • 0.5 cup Mayonnaise For dressing
  • 0.25 cup BBQ sauce Plus extra for serving
  • 2 tablespoon Ranch dressing
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Smoked paprika
  • Salt and pepper To taste
  • 1 cup Sharp cheddar cheese Shredded
  • 0.25 cup Fresh cilantro Chopped
  • 2 Green onions Sliced
  • 0.25 cup Bacon bits Optional

Instructions

  • Cook pasta al dente, rinse, and cool.
  • Dice or shred BBQ chicken.
  • Whisk mayonnaise, BBQ sauce, ranch, vinegar, smoked paprika, salt, and pepper.
  • Chop vegetables.
  • Toss pasta, chicken, corn, beans, bell pepper, and red onion with dressing.
  • Add cherry tomatoes, cheddar, cilantro, green onion, and bacon bits.
  • Cover and chill for at least 2 hours before serving.
