Ingredients

  • 2 slices Good quality bread Sourdough Sourdough,whole grain, or your favorite
  • 1 Ripe avocado Hass variety preferred
  • 1 tablespoon Fresh lemon juice Prevents browning
  • ¼ teaspoon Salt Flaky sea salt preferred
  • ¼ teaspoon Freshly ground black pepper
  • Red pepper flakes (optional) For heat
  • Extra virgin olive oil Light drizzle enhances flavor
  • 2 Eggs(optional) Fried, poached, or soft-boiled
  • Cherry tomatoes(optional) Halved
  • Microgreens/sprouts
  • Crumbled feta cheese
  • Everything bagel seasoning Optional seasoning
  • Fresh herbs (optional) optional Cilantro, basil, chives

Instructions

  • Toast your bread slices until golden brown and crisp.
  • Cut and pit the avocado, scoop flesh into bowl, add lemon juice, salt, pepper.
  • Mash mixture to preferred consistency with fork.
  • Spread avocado on toast, drizzle with olive oil, season with red pepper flakes.
  • Add toppings like egg, feta, tomatoes, etc., as desired.
