Ingredients

For the Chicken

  • 2 pieces boneless skinless chicken breasts about 1 lb
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground ginger
  • salt and pepper to taste

For the Salad

  • 6 cups mixed greens romaine and cabbage mix
  • 2 cups purple cabbage shredded
  • 1 large carrot julienned
  • 1 piece red bell pepper thinly sliced
  • 1 piece cucumber diced
  • 0.25 cup sliced almonds
  • 2 stalks green onions chopped
  • 2 tablespoons sesame seeds

For the Sesame Dressing

  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 0.25 teaspoon red pepper flakes optional

Instructions

  • Season chicken with soy sauce, sesame oil, garlic powder, ginger, salt, and pepper. Marinate 15 minutes.
  • Cook chicken 6–7 minutes per side until 165°F. Rest, then slice.
  • Combine dressing ingredients until smooth.
  • In a large bowl, mix greens, cabbage, carrot, bell pepper, and cucumber.
  • Add chicken, drizzle dressing, sprinkle almonds, green onions, and sesame seeds.
  • Enjoy immediately.
