Instructions

  • Whisk together flour, sugar, and salt, then cut in cold butter until pea-sized pieces form. Add ice water and apple cider vinegar, mixing gently to form dough. Chill for at least 1 hour.
  • Peel, core, and slice apples; toss with lemon juice. Mix sugars, flour, cinnamon, nutmeg, and salt, then combine with apples. Let sit for 15-30 minutes to draw out juices.
  • Preheat oven to 425°F (220°C). Roll out dough, fit into pie plate, add apple filling, and top with second crust. Crimp edges, brush with egg wash, and sprinkle with coarse sugar.
  • Bake at 425°F for 20 minutes, then reduce heat to 375°F and bake for 40-45 minutes until golden brown. Cool before slicing.
