Peel, core, and slice apples; toss with lemon juice. Mix sugars, flour, cinnamon, nutmeg, and salt, then combine with apples. Let sit for 15-30 minutes to draw out juices.
Preheat oven to 425°F (220°C). Roll out dough, fit into pie plate, add apple filling, and top with second crust. Crimp edges, brush with egg wash, and sprinkle with coarse sugar.
