  • 1 Large mixing bowl To combine coconut mixture

Ingredients

Coconut Mixture

  • 3 cups Sweetened shredded coconut Base layer
  • 0.5 cup Powdered sugar For sweetness
  • 0.25 cup Coconut oil melted, helps bind coconut
  • 2 tablespoon Honey or maple syrup Natural sweetener
  • 1 teaspoon Vanilla extract Flavor
  • 0.25 teaspoon Salt Balances sweetness

Almond Layer

  • 1.5 cups Whole almonds toasted
  • 2 tablespoon Coconut oil Mixed with almonds
  • 1 tablespoon Honey For almond layer

Chocolate Layer

  • 12 oz Dark chocolate chips (or chopped chocolate) Coating
  • 2 tablespoon Coconut oil Smooths chocolate
  • 1 teaspoon Vanilla extract In chocolate layer

Instructions

  • Line an 8x8 pan with parchment.
  • Mix coconut, sugar, coconut oil, honey, vanilla, and salt.
  • Press mixture into pan and chill 20 mins.
  • Toast almonds, chop half, and mix with oil and honey.
  • Spread almond mix on coconut layer.
  • Melt chocolate with oil and stir in vanilla.
  • Pour chocolate over almonds and smooth evenly.
  • Chill 2 hours until set.
  • Cut into 16 squares and serve.
